A tasty and easy one-dish dinner, this sausage stir-fry pairs sausages with a rainbow of vibrant veggies and savory seasonings. It's ideal for a hectic weeknight meal.
Ingredients: 2 sausages any flavor you prefer. 1 cup of broccoli florets. 1/2 red bell pepper, sliced. 1/2 yellow bell pepper, sliced. 1/2 onion, thinly sliced. 2 cloves garlic, minced. 2 tablespoons soy sauce. 1 tablespoon vegetable oil. 1/2 teaspoon ginger, grated. 1/2 teaspoon red pepper flakes adjust to taste. Salt and pepper to taste. Cooked rice or noodles for serving.
Instructions: Slice the sausages into bite-sized pieces. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced sausages and cook until they start to brown, about 3-4 minutes. Add the minced garlic and grated ginger, and stir-fry for another minute until fragrant. Add the broccoli florets, sliced red and yellow bell peppers, and thinly sliced onion to the skillet. Stir-fry the vegetables and sausages for 4-5 minutes until they start to soften but are still crisp. Pour in the soy sauce and sprinkle with red pepper flakes. Stir to combine. Season with salt and pepper to taste, but be cautious with the salt as the soy sauce is already salty. Continue to stir-fry for another 2-3 minutes until everything is well coated and heated through. Serve the sausage stir-fry hot over cooked rice or noodles. Enjoy your delicious one-dish meal!
