Enchilada update! The WORST pics (lolol) but they were yummy!! Much better than fine! Definitely good, maybe even GREAT?! Ken went back for seconds and so did I, and I am very much looking forward to leftovers for a weird savory breakfast tomorrow.

I used this recipe from budget bytes but cooked some chicken breasts in the instant pot and shredded them instead of picking the meat off a rotisserie chicken. Highly recommend if you’re not vegetarian (although one commenter doubled the beans and omitted the meat). I’ll definitely make them again!

Last night was pizza night. Don’t be fooled, we each went back for our third slice and finished up the pizza in one sitting while watching Perry Mason. I’ve been fiddling with the crust cook time and this one was PERFECTION!

Sourdough! Attempt #1

Got up early (ish) Saturday to start baking bread and by dinner time this pretty lil loaf was out of the oven! The number of times during the process that I was like “oh shit I’ve messed this up” and then like “maybe it will be okay?” and then “nope shit I’ve definitely messed up” lol it was a wild ride. Ultimately I did definitely kinda mess up by not kneading it enough and not letting it rise enough and not baking it enough but those first two mistakes aren’t a big deal - it still tastes GREAT - and that last mistake is remedied by just roasting each slice so ¯\_(ツ)_/¯

Very much looking forward to future loaves and improving and sharing them with friends when we can be around other people again.

Ya girl made bagels and they are GOOD!! Seriously so good!

The perfect chewy exterior. Light enough on the inside to not feel super heavy in my tummy. Moist and soft and delicious. Aghhhh I’m proud and happy and full! This is my most involved baking project yet and I am just so happy with how they turned out! Bonus: they’re sourdough bagels so I got to use some of my discard.

I made a pizza cinnamon roll (no cinnamon, just inspired by cinnamon rolls) and it was SO GOOD!

Half a cup of self rising flour in a bowl, add Greek yogurt slowly by the spoonful, mixing until it turns into dough. I ended up with a quarter to a third of a cup of yogurt, probably. Roll/knead into a nice lil dough ball, roll out on the counter or parchment paper or a silicone mat, smear with pizza sauce and seasonings and pepperonis and mozzarella. Cut in half lengthwise and roll half up, then roll the other half around the rolled-up half. Stick in a little bowl to hold the shape and microwave for a minute and a half. BOOM! 🍕

My family did a remote family dinner where we all cooked the same thing on the same day, and we chose to do “divine chicken” which is just a simple roast chicken we used to eat all the time when I was growing up. We texted throughout the week as we grocery shopped, then during the day as we cooked.

We all cooked and ate at different times - my parents eat at like 4pm and my brother eats at like 8 and I’m in the middle - so it wasn’t like we were Skyping and eating together or anything, but the closeness of all doing the same things and enjoying the same aromas all day and flavors that evening, it was so lovely!

Then with the leftover chicken and veggies I decided to make my favorite puff pastry pot pie, and my parents are doing the same with theirs tomorrow.

So tasty! Such family! Wow!

Sourdough, round 2! Baked all the way through this time so that’s a win. Also it tastes good. Wonderful texture. Half is going to a friend and I’m so proud and so excited to share!
