I think immortality depends on the age one becomes immortal.

A 15 year old immortal can live for thousands of years, gaining all the knowledge available to them but still have the mentality of a snarky teenager still going through puberty.

Which is why I have no problems with Edward seeing Bella, who is, by all accounts compared to him, a child.
