Couscous Tfaya is a classic Moroccan dish known for its sweet and savory flavors. This recipe combines tender chicken, fragrant spices, and a delightful mixture of dried fruits and honey. It's a true taste of Morocco!
Ingredients: 2 cups couscous. 1 1/2 pounds chicken, cut into pieces. 2 onions, finely chopped. 1 cup dried apricots, chopped. 1 cup raisins. 1/2 cup almonds, toasted. 2 tablespoons olive oil. 2 teaspoons ground cinnamon. 1 teaspoon ground cumin. 1 teaspoon ground ginger. 1/2 teaspoon saffron threads. Salt and pepper to taste. 4 cups chicken broth. 1/2 cup honey. Cilantro leaves for garnish.
Instructions: Put the olive oil in a big pot and heat it over medium-high heat. Put in the chopped onions and cook them until they turn clear. Put the chicken pieces in and cook them all over. Salt, pepper, ground ginger, ground cumin, ground cinnamon, and ground cinnamon should all be mixed in. Put the chicken broth in and slowly raise the heat. Put the lid on top and cook for 30 minutes, or until the chicken is soft. Make the couscous in a different bowl by following the directions on the package. Add the honey, dried apricots, raisins, and toasted almonds to the chicken while the couscous is cooking. Allow the flavors to blend and the sauce to get thicker by cooking for another 10 minutes. Use a fork to fluff up the cooked couscous, then put it on a platter to serve. Put the chicken and sauce mix on top of the couscous. Add cilantro leaves on top and serve hot.
