I’m working an odd shift this week, my third week of odd shifts. And I came home after 11, and had stovetop Frito pie. (Yes, yes, Fritos in a bowl with leftover chili and cheese - I’m a culinary master.) And I wanted Banana Bread - a sudden craving. Only, there’s no bananas in the house, and the stores are all closed because of Covid restricted hours. (Apparently, the virus can’t get you if you are in before 10 pm - yet I work until 11.) Anyway, I DID have pumpkin...so I made pumpkin bread. And it is in the oven, smells wonderful...but it won’t finish cooking!!! Bake 1 hour, 10 minutes it said. I’m at altitude, takes a little longer. SURE! But it is now after 2 am, and the center isn’t done. And it’s FAR too late, and it looks wonderful - it’s just raw inside. So I’m sitting up late with my pumpkin bread. And if that isn’t the most messed up reason to be awake at two in the morning, I don’t know what is.
