Ingredients: 6 medium potatoes, scrubbed and diced. 1 cup shredded cheddar cheese. 1/2 cup grated Parmesan cheese. 1/2 cup mayonnaise. 1/2 cup sour cream. 1/2 cup cooked bacon, crumbled. 2 green onions, chopped. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. Boil diced potatoes until fork-tender, then drain and set aside. In a large bowl, combine cheddar cheese, Parmesan cheese, mayonnaise, sour cream, bacon, green onions, salt, and pepper. Fold in the cooked potatoes until well coated. Transfer the mixture to a greased baking dish. Bake in the preheated oven for 25-30 minutes or until golden and bubbly. Serve hot and enjoy!
