Adding tart cranberries to this Cranberry Pecan Tart makes it a delightful change from the traditional pecan pie. It has the right amount of sweet and sour flavors, and the crust is made of butter.
Ingredients: 1 9-inch pie crust. 1 cup fresh cranberries. 1 cup chopped pecans. 3/4 cup granulated sugar. 1/2 cup light corn syrup. 3 large eggs. 1/4 cup unsalted butter, melted. 1 teaspoon vanilla extract. 1/4 teaspoon salt.
Instructions: Preheat oven to 350F 175C. Place the pie crust in a tart pan, pressing it gently into the bottom and up the sides. In a mixing bowl, combine cranberries, pecans, sugar, corn syrup, eggs, melted butter, vanilla extract, and salt. Pour the mixture into the prepared tart shell. Bake for 40-45 minutes or until the filling is set and the crust is golden brown. Allow the tart to cool before serving.
