Ingredients: 4 large bell peppers. 1 cup quinoa, rinsed. 2 cups vegetable broth. 1 tablespoon olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 can 15 ounces black beans, drained and rinsed. 1 cup corn kernels. 1 cup diced tomatoes. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. 1/4 cup chopped fresh cilantro. 1/2 cup vegan cheese, shredded optional.
Instructions: Before you start cooking, heat the oven to 375F 190C. Peel the bell peppers and cut off the tops. Then take out the seeds and membranes. Put them in a baking dish with the cut side facing up. Bring the vegetable broth to a boil in a medium-sized saucepan. Turn down the heat, add the quinoa, cover, and simmer for 15 to 20 minutes, or until the quinoa is cooked and the liquid is absorbed. Warm up the olive oil in a big pan over medium-low heat. Put in the garlic and onion, and cook them until they get soft. Add the corn, diced tomatoes, cumin, chili powder, salt, and pepper, and mix them in. Bring it to a boil. Take it off the heat and add the cooked quinoa and cilantro. Put the quinoa mixture into the bell peppers and gently press down to pack it in. Sprinkle the vegan cheese on top of the stuffed peppers if you are using it. Place foil over the baking dish and bake for 25 to 30 minutes, or until the peppers are soft. Serve hot, and if you want, top with more cilantro.
