These Vanilla Orange Creamcicle Cupcakes are a tasty treat that taste like creamy vanilla and tangy orange. Perfect for any event!
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup milk. Zest of 1 orange. 2 tbsp fresh orange juice. 1/4 cup sour cream. Orange food coloring optional. For the Creamcicle Frosting:. 1/2 cup unsalted butter, softened. 4 cups powdered sugar. 1/4 cup fresh orange juice. 1 tsp vanilla extract. 1/4 cup heavy cream.
Instructions: Preheat your oven to 350F 175C and line a cupcake tin with paper liners. In a bowl, whisk together the flour, baking powder, and salt. Set aside. In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Mix in the dry ingredients in three additions, alternating with the milk, beginning and ending with the dry ingredients. Stir in the orange zest and fresh orange juice. If desired, add a few drops of orange food coloring to achieve the desired color for your cupcakes. Fold in the sour cream until the batter is smooth and well combined. Spoon the batter into the prepared cupcake tin, filling each liner about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. While the cupcakes are cooling, prepare the Creamcicle Frosting. In a bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with the fresh orange juice and vanilla extract, until the frosting reaches your desired consistency. If the frosting is too thick, you can thin it out with the heavy cream. Beat until the frosting is light and fluffy. Once the cupcakes are completely cooled, pipe or spread the Creamcicle Frosting on top of each cupcake. Optionally, garnish with orange zest or colorful sprinkles. Serve and enjoy your delicious Vanilla Orange Creamcicle Cupcakes!
