Ingredients: 2 sheets vegan puff pastry. 500g mixed mushrooms, finely chopped. 1 onion, finely chopped. 3 cloves garlic, minced. 1 tbsp olive oil. 2 tbsp soy sauce. 1 tbsp balsamic vinegar. 1 tbsp thyme, chopped. Salt and pepper to taste. 1 cup spinach leaves. 1/4 cup vegan cream cheese. 1/4 cup breadcrumbs. 1 tbsp vegan butter, melted.
Instructions: Ready the oven by heating it up to 200C 390F. Put olive oil in a pan and heat it over medium-low heat. Put in the garlic and onions, and cook them until they get soft. Soy sauce, balsamic vinegar, thyme, salt, and pepper should all be added now. Cook the mushrooms until the water in them evaporates. Take it off the heat and let it cool down. Put one sheet of puff pastry on a baking sheet that has been lined with parchment paper. Cover the pastry with spinach leaves in a thin layer. Cover the spinach with vegan cream cheese. Cover the cream cheese layer with the mushroom mixture. Add breadcrumbs on top of the mushrooms. Put the second puff pastry sheet on top. Use a fork to press the edges together to seal them. Melt some vegan butter and brush it on top. The pastry should be baked in a hot oven for 25 to 30 minutes, or until it is golden brown and crispy. Take it out of the oven and let it cool down for a few minutes. Then cut it into pieces and serve.
