For a quick and tasty dinner, try chicken thighs that are soft and covered in a creamy mustard sauce.
Ingredients: 4 chicken thighs. Salt and pepper to taste. 2 tablespoons olive oil. 1/2 cup chicken broth. 1/2 cup heavy cream. 2 tablespoons Dijon mustard. 1 tablespoon whole grain mustard. 1 tablespoon chopped fresh parsley.
Instructions: Add salt and pepper to the chicken thighs. In a pan, heat the olive oil over medium-high heat. It will take about 4 to 5 minutes on each side to brown the chicken thighs after you add them. Take the chicken out of the pan and set it aside. Add chicken broth to the same pan and scrape the bottom to get rid of any browned bits. You can add heavy cream, Dijon mustard, and whole grain mustard and mix them in. Bring to a simmer and cook for about 34 minutes, until the sauce gets a little thicker. Put the chicken thighs back in the pan and cover with the sauce. Simmer for 10 to 12 minutes, or until the chicken is fully cooked. Add chopped parsley as a garnish before serving.
