Using my toaster oven and one pot, I made this Dijon Chicken and Cauliflower Soup. The chicken breast is roasted first with my dijon mustard marinade and then added to seasoned broth of cauliflower and veggies. There are some diced green chilies in the broth to give a small kick to the soup. This soup is also keto and low carb friendly.
Tonight's dinner- Dijon mustard marinaded chicken with black beans and white rice. Bake chicken at 350 for 25 degrees or desired doneness. Cook rice as directed For beans- sauté garlic in olive oil and add beans. Cook for 10-15 mins I know there are no veggies but this is all I had so we will go grocery shopping tomorrow :)

Maple Dijon chicken 8 drumsticks (skin removed) 2 shallots, thinly sliced 2 cloves garlic, minced 1 1/2c low sodium chicken stock 1/4c maple syrup 1/4c Dijon mustard 1T dark cherry balsamic vinegar 2T vegetable oil Sea salt and cracked black pepper to taste Heat your skillet on medium/high with vegetable oil Season the drumsticks with sea salt and pepper then brown in the skillet then remove and set aside Add shallots and garlic to the skillet and cook until fragrant, then deglaze with chicken stock (scrap up all that brown goodness) bring that to a simmer In a small bowl, combine the maple syrup, Dijon mustard and vinegar (if you don't have dark cherry regular balsamic will work just fine) until smooth and add to the simmering chicken stock Return the chicken to the party making sure to spoon the sauce all over it, cover with a fitted lid and cook till tender Serve with your favorite side dish! I served mine with mashed potatoes and sautéed kale, Brussels sprouts and leeks
