This homemade persimmon jam is a delightful and flavorful way to preserve the sweet goodness of ripe persimmons. The addition of lemon juice, zest, and warm spices like cinnamon and cloves adds a lovely depth of flavor to this jam.
Ingredients: 4 cups ripe persimmons, peeled and mashed. 1 cup granulated sugar. 1 lemon, juiced and zested. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 1/4 teaspoon salt.
Instructions: In a big bowl, wash, peel, and mash the ripe persimmons. The mashed persimmons, sugar, lemon juice, zest, ground cinnamon, ground cloves, and salt should all be combined in a big pot. To allow the flavors to meld, thoroughly stir the mixture and let it sit for 30 minutes. Transfer the pot to a medium-high heat and stir frequently to bring the mixture to a boil. The jam should be simmered for 30 to 40 minutes, or until it thickens to the right consistency. Make sure to stir from time to time to avoid burning or sticking. Take the jam off the heat and allow it to cool slightly once it reaches the desired thickness. Using sterile glass jars, fill them with the hot jam, leaving a headspace of about 1/4 inch. After placing lids on the jars, allow them to cool to room temperature. The homemade persimmon jam should be kept in the fridge or in a cool, dark place. As it cools, it will get thicker still. Savor your delectable homemade persimmon jam with biscuits, toast, or as a garnish for sweets!
