Ingredients: 1 cup almond flour. 1/2 cup cocoa powder. 1/2 cup powdered sugar. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 2 large eggs. 1/4 cup melted coconut oil. 1 teaspoon vanilla extract. 1/2 teaspoon peppermint extract. 1/2 cup crushed candy canes or peppermint candies.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, mix almond flour, cocoa powder, powdered sugar, baking powder, and salt. In another bowl, whisk eggs, melted coconut oil, vanilla extract, and peppermint extract. Combine wet and dry ingredients until a dough forms. Cover and chill the dough for 30 minutes. Roll dough into balls, then coat each ball in crushed candy canes. Place coated dough balls on the prepared baking sheet, spacing them apart. Bake for 10-12 minutes until cookies are set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
