These crispy roasted potatoes are great as a side dish or a snack because they taste great and are hard to resist.
Ingredients: 6 medium Yukon Gold potatoes, washed and diced into cubes. 2 tablespoons olive oil. 1 teaspoon garlic powder. 1 teaspoon paprika. Salt and pepper to taste. Fresh parsley, chopped optional, for garnish.
Instructions: Preheat oven to 425F 220C. In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 30-35 minutes, flipping halfway through, until golden brown and crispy on the outside and tender on the inside. Remove from the oven and sprinkle with chopped fresh parsley, if desired, before serving.
