These sweet potato tater tots taste great and are better for you than regular potato tater tots. The outside is crispy and the inside is soft. The spices give them a lot of flavor. They're also gluten-free, paleo-friendly, and great for snacking or as a side dish.
Ingredients: 2 medium sweet potatoes, peeled and grated. 1/4 cup almond flour. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. 1/4 teaspoon paprika. Salt and pepper to taste. Coconut oil, for frying.
Instructions: Grate the sweet potatoes and mix them with the almond flour, garlic powder, onion powder, paprika, salt, and pepper in a large bowl. Combine well by mixing. Make little tots or cylinders out of the mixture by hand. Warm up a big pan with coconut oil over medium-low heat. Carefully add the shaped tater tots to the hot oil. If you need to, work in batches to keep the pan from getting too crowded. The tater tots should be cooked for three to four minutes on each side, or until they are crispy and golden brown. Put the tater tots on a plate lined with paper towels to drain off the extra oil after taking them out of the pan. Enjoy while hot!
