These tasty falafel waffles are a new take on traditional falafel. They're great for a quick and easy meal because they're crispy on the outside and soft on the inside.
Ingredients: 1 cup chickpeas, cooked and drained. 1/2 onion, chopped. 1/4 cup fresh parsley, chopped. 2 cloves garlic, minced. 1 tsp cumin. 1 tsp coriander. 1/2 tsp baking powder. Salt and pepper to taste. 2 tbsp all-purpose flour. 2 tbsp olive oil. 1/4 cup water.
Instructions: Preheat your waffle iron according to manufacturer's instructions. In a food processor, combine chickpeas, onion, parsley, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until well combined, but not completely smooth. Transfer the mixture to a bowl and stir in the all-purpose flour. Grease the waffle iron with olive oil to prevent sticking. Spoon the falafel mixture onto the waffle iron and spread it out evenly. Close the waffle iron and cook for about 5-7 minutes, or until the falafel waffles are golden brown and crispy. While the waffles are cooking, prepare your favorite toppings and sauces. Remove the falafel waffles from the iron and serve hot with your choice of toppings and sauces.
