Ingredients: 1 lb stew beef, cubed. 2 cups potatoes, diced. 1 cup carrots, sliced. 1 onion, chopped. 2 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 1 cup beef broth. 1 tsp paprika. 1/2 tsp cumin. 1/2 tsp thyme. Salt and pepper to taste. 1 bay leaf.
Instructions: Place stew beef, potatoes, carrots, onion, and garlic into the slow cooker. In a separate bowl, mix together diced tomatoes, beef broth, paprika, cumin, thyme, salt, and pepper. Pour the tomato mixture over the ingredients in the slow cooker. Add the bay leaf. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef and vegetables are tender. Before serving, taste and adjust seasoning if necessary. Remove bay leaf before serving.
