Ingredients: 2 cups fresh radishes, thinly sliced. 1 cup cucumber, diced. 1/2 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup fresh mint leaves, torn. 1/4 cup feta cheese, crumbled. 1/4 cup toasted pine nuts. 2 tablespoons extra-virgin olive oil. 1 tablespoon fresh lemon juice. Salt and pepper to taste.
Instructions: In a large bowl, combine radishes, cucumber, red onion, cilantro, and mint leaves. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
