The only problem is whenever I try to make a taco, I get too excited and crush it.
On the evening of Saturday May 20th, I was feeling well enough to cook for the first time in a while. In a risky deviation from my till-then diet of cheese quesadillas, I decided to make a recipe I’d had bookmarked for a while: Caramelized Pork Tacos with Pineapple Salsa by Pinch of Yum.
I started by making the pineapple and cucumber salsa; I’d never had anything like it before, so I was really curious about what it would taste like. Preparation was easy enough; just a small dice of cucumbers, pineapples, and shallot, tossed with lime juice and salt. Admittedly, I left out the cilantro (sorryyyy).
Even though that only took a few minutes to throw together, the chili mayo was even easier: just two parts mayo to one part spice. Though it didn’t really fit the Latin American theme, I used Sambal Oelek, a more Asian-inspired chile paste. It’s pretty much my heat of choice these days, so I couldn’t resist including it in this application.
Once the sauces were done, I turned my attention to the pork. Rather than using thin strips of pork loin like the recipe called for, I used pulled pork I’d cooked in my slow cooker throughout the day. .
All it needed was a quick spin in the cast iron for some caramelization, along with some finely diced aromatics and, twist! Fish sauce! Maybe sambal wasn’t such a bad idea for this recipe after all, given this unexpected Asian ingredient, which by the way really elevated the caramelization process with that sweet funk
These were so good! The pictures really don’t do them justice. I wouldn’t have guessed that a little time in the skillet with shallot, garlic, jalapeno, and fish sauce would have transformed the pork so much; it was definitely worth it to give it this treatment rather than to have just added the pulled pork straight from slow cooker to taco. And I absolutely loved the cucumber salsa - so sweet and refreshing against the spicy, creamy chile sauce. These tacos came out so balanced, and with the slow cooker employed, they really came together quickly and easily. And I’ve learned that very quick meals are essential for a sickly preggo, whose nausea can show up and interfere at any time. I’m glad I was up for this one - great dinner!

Crisp Cucumber Salsa Recipe
This is wonderful salsa! 2 cups finely chopped seeded peeled cucumber 1/2 cup finely chopped seeded tomato 1/4 cup chopped red onion 2 Tbsp minced fresh parsley 1 jalepeno pepper, seeded and chopped 4-1/2 tsp minced fresh cilantro 1 garlic clove, minced or pressed 1/4 c reduced-fat sour cream 1-1/2 tsp lemon juice 1-1/2 tsp lime juice 1/4 tsp ground cumin 1/4 tsp seasoned salt Tortilla chips In a small bowl, combine the first seven ingredients. In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt. Pour over cucumber mixture and toss gently to coat. Serve with tostito chips.

Cucumber Salsa
I large cucumber, seeded & diced 2 tomatoes, diced 1 avocado, chopped 1/4 cup chopped fresh cilantro 1 jalapeno, finely diced 2 roasted garlic cloves, minced zest of 1 lime 2 tbsp. of lime juice 2 tbsp.oil salt & pepper
Mix all the ingredients together in a bowl. Let the salsa sit in the refrigerator for a minimum of 2 hours before serving.
