These Keto California Rolls are a tasty and low-carb take on the usual sushi roll. We are making the wrappers out of cucumber strips instead of rice, which makes them perfect for a ketogenic diet. The filling is made of fake crab meat or cooked crab meat mixed with mayonnaise, avocado, rice vinegar, sesame oil, and spices like garlic powder, salt, and pepper. These rolls are delicious and easy to make, so they're a great choice for a light meal or snack that will fill you up.
Ingredients: 1 large cucumber. 4 oz imitation crab meat or cooked crab meat. 1 avocado. 2 tablespoons mayonnaise. 1 teaspoon rice vinegar. 1/2 teaspoon sesame oil. 1/4 teaspoon salt. 1/4 teaspoon pepper. 1/4 teaspoon garlic powder. Toasted sesame seeds for garnish.
Instructions: Slice the cucumber lengthwise into thin strips using a vegetable peeler or a mandoline slicer. In a bowl, mix the imitation crab meat or cooked crab meat, mayonnaise, rice vinegar, sesame oil, salt, pepper, and garlic powder until well combined. Place a cucumber strip on a flat surface and spread a thin layer of the crab mixture onto it. Cut the avocado into thin slices and place a slice on top of the crab mixture. Carefully roll up the cucumber strip with the crab mixture and avocado inside to form a roll. Repeat the process with the remaining cucumber strips, crab mixture, and avocado slices. Once all the rolls are assembled, sprinkle toasted sesame seeds on top for garnish. Serve the Keto California Rolls immediately, or refrigerate for 30 minutes before serving for a chilled option.
