Green food coloring optional. 1/2 cup unsalted butter, softened. 1 cup powdered sugar for filling. 1-2 drops green food coloring for filling. Mint leaves for garnish optional.
Instructions: Preheat your oven to 300F 150C and line a baking sheet with parchment paper. In a food processor, combine almond flour and powdered sugar. Pulse until well combined and fine in texture. Sift the mixture into a large mixing bowl, discarding any larger pieces. In a separate bowl, beat the egg whites until they start to foam. Gradually add the granulated sugar while continuing to beat. Beat until stiff peaks form, and optionally add green food coloring and mint extract during this step. Gently fold the almond flour and powdered sugar mixture into the egg white mixture until you achieve a smooth, thick batter. Be careful not to overmix. Transfer the batter to a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheet, spacing them evenly. Let the macarons sit at room temperature for about 20-30 minutes to form a skin on top. Bake in the preheated oven for 15-18 minutes, or until the macarons have risen and have firm shells.
