57. cudighi

a wonderful way to round out the C's. hot italian sausage is one of loves of my life, up there with bao and the sandwich queen. this sandwich takes it a step further.
cudighi is a spiced sausage, with notes of cinnamon and wine. toss that in a roll with sauteed peppers and onions, tomato sauce, and slices of mozzarella. it's genuinely a dream. the spice of the sausage is sharp and interesting, the veggies and sauce soften the roll, the cheese ties it all together beautifully. it's a bit of a mess, a lot of strong flavors all at once. i was a big fan.
i've mentioned before my love of cinnamon as a savory ingredient. i've never had it in sausage before, which is funny. it feels very natural there.
