Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsalted butter, softened. 1/4 cup milk. 1 egg. 1/2 teaspoon vanilla extract. 1/2 teaspoon baking powder. 1/4 teaspoon salt.
Instructions: Preheat your oven to 350F 175C and line a mini cupcake tin with liners. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined. Scoop the cupcake batter into the mini cupcake liners, filling each about two-thirds full. Bake for 10-12 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Once cooled, place the mini cupcakes in individual carriers to enjoy or share.
