A flavorful and nutritious curry combining the bitterness of melons with the earthiness of potatoes, spiced with aromatic Indian spices.
Ingredients: 2 medium bitter melons, thinly sliced. 2 medium potatoes, peeled and cubed. 1 onion, finely chopped. 2 tomatoes, chopped. 2 cloves garlic, minced. 1-inch piece ginger, grated. 2 green chilies, chopped. 1 teaspoon cumin seeds. 1 teaspoon turmeric powder. 1 teaspoon coriander powder. 1 teaspoon garam masala. Salt to taste. 2 tablespoons oil. Fresh coriander leaves for garnish.
Instructions: Set a pan on medium heat and add oil. Put in the cumin seeds and let them pop. Chop up the green chilies, onions, garlic, and ginger and add them. Cook the onions until they turn golden brown. Put in the chopped tomatoes and cook them until they get really soft. Garam masala, turmeric powder, and coriander powder should all be added. Cook for two minutes after mixing well. Slice the bitter melons and cut the potatoes into cubes. Use a stir to mix. To your taste, add salt and mix well. Cover and cook, stirring every now and then, for 15 to 20 minutes, or until the potatoes are soft. Add fresh coriander leaves on top of the potatoes once they are fully cooked. Warm it up and serve it with bread or rice.
