Ingredients: 1 cup all-purpose flour. 1/4 cup granulated sugar. 1/4 cup brewed coffee, cooled. 1/4 cup milk. 1/4 cup unsalted butter, melted. 1 large egg. 1 tsp baking powder. 1/4 tsp salt. 1/2 tsp vanilla extract. Oil for frying. 1/2 cup custard store-bought or homemade. Powdered sugar for dusting.
Instructions: Combine the flour, baking powder, sugar, and salt in a mixing bowl. The brewed coffee, milk, melted butter, egg, and vanilla extract should all be combined in a separate bowl. Once a smooth batter forms, pour the wet ingredients into the dry ingredients and stir. In a deep pan, heat the oil to 350F 175C. Spoonfuls of batter should be dropped into the hot oil and fried for two to three minutes on each side, or until golden brown. After taking the doughnuts out of the oil, pat dry with paper towels. When the doughnuts are cool enough to handle, poke a tiny hole in the side and fill them with custard using a piping bag. Sprinkle powdered sugar on top of the filled doughnuts.
