FUCK, that's a horrible question, film soundtracks are basically my kryptonite. ;-; If I absolutely had to choose, I'd probably have to go with the LOTR soundtrack (hmm I'm seeing a pattern developing here), TTT in particular.

I noticed that ocean is red in rebuild but not EoE, is that a minor detail shinji forgot to ‘recreate’?

The ocean turns completely red at the end of evangelion [perhaps due to Rei's blood] and that change is carried over into rebuild further adding evidence to the theory that it all exists in one singular timeline. One of the points of this theory is that 3rd impact resets the whole thing [minus the ocean color] and becomes rebuild's second impact.
