Ingredients: 1 lb white fish fillets, such as cod or tilapia. 1 cup gluten-free cornmeal. 1/2 cup gluten-free all-purpose flour. 1 teaspoon paprika. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. Vegetable oil for frying. 8 gluten-free corn tortillas. 1 cup shredded cabbage. 1 avocado, sliced. 1/4 cup dairy-free mayonnaise. 2 tablespoons lime juice. Fresh cilantro leaves for garnish.
Instructions: In a shallow dish, mix together the cornmeal, gluten-free flour, paprika, garlic powder, onion powder, salt, and pepper. Cut the fish fillets into small pieces and coat them in the cornmeal mixture, shaking off any excess. Heat vegetable oil in a large skillet over medium-high heat. Fry the fish pieces in the hot oil until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
