Starbucks Pumpkin Scones Copycat Recipe - These copycat scones are so easy to make and they're a million times tastier too!
Two things.
1. Did y’all know that home-made, thawed out pumpkin puree is a lot wetter than canned? Yeah, I was surprised too.
2. A 1/3 c measuring cup is the right size for a normal-sized scone with wet dough.
These are two pieces of information that I really wish I’d had prior to making this recipe. Mostly because scraping wet scone dough off of my hands is surprisingly annoying. Also scraping it off the counter, but that’s a given.
Not sure if I mentioned last time, but the main reason I made a metric boatload of scones last Sunday was because when I get stressed out or sad, I bake. It’s a behavior learned from a former (awesome) roommate who, when attempting to avoid working on her dissertation, would bake. It got to the point where, when if me or our other roommate got home and saw her baking, we’d ask what was up and if we could help as a sounding board.
Anyway, I was both stressed out and sad last Sunday, so I made a bunch of scones ahead of time and used up the entirety of my household flour. Which, new experience for me? This wasn’t all that bad to make. The directions are pretty straightforward, and while I ended up using my home-mixed pumpkin spice mix rather than measuring out spices (2.5tsp, fyi) for the scone dough, that turned out fine. Still, the rendered pumpkin I got from my parents - which, while tasty - was a lot wetter than the canned, so I ended up with a dough that was closer in consistency to the blackberry oatmeal recipe. Which was fine, and I didn’t really have to adjust cooking time. I always check scones a few minutes early (my stove, everybody), and these were fine at the 10.5-minute mark. Pumpkin dries out quicker than blackberries, apparently.
Price wise - leaving out the pumpkin, which was free - this was super cheap as a full recipe. Again, I had the spices and dairy on-hand, so the full recipe was $2.02 for ~eight scones, shaking out to $.25/scone. Even with paying for the pumpkin, that wouldn’t bump the price up much. But then, you’d be left with a bunch of pumpkin to use up. This is more of an autumn recipe if you don’t have rendered pumpkin in your freezer and no plans to use up the rest of your pumpkin.
