Ingredients: 2 cups all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup unsalted butter, softened. 3/4 cup granulated sugar. 3/4 cup packed brown sugar. 1 teaspoon vanilla extract. 2 large eggs. 1 cup green chocolate chips. 1/2 cup chopped pistachios. Green food coloring optional.
Instructions: Preheat the oven to 350F 175C. Line baking sheets with parchment paper. In a medium bowl, whisk together the flour, baking soda, and salt. In a large bowl, cream the softened butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy. Add the eggs, one at a time, mixing well after each addition. If desired, add a few drops of green food coloring to achieve a vibrant green color. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the green chocolate chips and chopped pistachios. Drop rounded tablespoonfuls of cookie dough onto the prepared baking sheets. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
