The first question is what do you mean by artificial universe? It could be a simulated universe inside some kind of computer or physical structure. If the latter then I'm sure it already exists in some form since we have been building for many years now.
It's not an easy thing to do but I'm sure it can be done. They should just build a structure like a planet or something and then put some sort of life on it that can grow with the help of artificial energy sources. How they would get this life is another topic.
The other question is how would you grow things as nature would? I'm not sure what you mean by that but it sounds like the goal of this so called artificial universe is to simulate life. That would be interesting.
I honestly believe that the goal of creating an artificial universe is to see if it could be done. Who knows, perhaps we could discover something new about life and ourselves? Perhaps it would even lead us to a better understanding of how the world works.
I'm sure that we would benefit greatly from creating an artificial universe. It could potentially solve many problems and lead us to a better future for mankind.
That's all I have to say about that. The question is interesting and the future could be very bright for mankind
