Snacks - Pumpkin-Almond-Date Balls Taste the flavors of fall in every bite of these no-bake date balls packed with almonds, pumpkin puree, dark chocolate, and coconut flakes.
Gail's Energy Balls!
Ingredients:
About 1 to 1-1/2 cup of pitted, coarsely chopped dates (about 10-12 dates)
About 1/2 cup of shelled pistachios (can probably also use cashews or peanuts)
About 1/4 cup of shredded coconut, sweetened (what I used) or unsweetened
About 1/2 to 1 teaspoon of chia seeds (optional)
About 1/2 teaspoon of protein powder (optional)
About 1 teaspoon of cinnamon (can also put a dash of nutmeg or cloves, if you want)
Few dashes of flaky sea salt
Put it all in a small food processor and chop until everything is well mixed and chopped up, probably 1 to 2 minutes in a series of pulses.
Dump it into a bowl and squish it with your (clean) hands to further mix it up and make sure the ingredients are well dispersed.
Roll into ~ 3/4 inch balls, put on a plate or wax paper and refrigerate for an hour or two, so they're chilled and set.
Date Balls These date balls get texture from the addition of pecans and crisped rice cereal. They're an ideal addition to your Christmas cookie platter!

DATE COCONUT BALLS
Serving size: 12 balls Prep time: 10 minutes INGREDIENTS 1 cup dates 1/2 cup walnuts/ almond nuts 1/2 cup desiccated coconut, plus a bit extra to roll the balls in 1 tsp olive oil 1 tsp honey INSTRUCTIONS Add all ingredients to a food processor.
