A very romantic thing I can imagine is Gopikas churning milk on a full night and making malaiyo & pining for Lord Krishna. While it doesn't look this fabulous dessert is that old, but this katori of malai magnificence is indeed a UP creation which makes its presence only in winters. The milk is boiled and left to cool for a few hours, the dew is allowed to settle making it light enough to be churned. You could find a few vendors all invoking the name of adesh kumar selling this daulat ki chaat . It is essentially milk foam almost resembling snow speckled with khoya, mawa, and something which almost felt like a biscuit crumble. I made a stop on my trip from Delhi Uni just to have this . The earlier versions I have had being Lucknow's Malai Makkhan & @indianaccent 's delicious mango version. I also ended up having the kiwi & grape chat from the vendor nearby. Also spotted the usual winter favorite, gajak & desisted from the alluring tikkis at Natraj.
