The smoky tomatoes, crispy bacon, and tangy vinaigrette dressing in this Smoked Tomato and Bacon Vinaigrette Salad go very well together. It has just the right amount of each flavor and texture to please your palate.
Ingredients: 4 cups mixed greens. 1 cup cherry tomatoes, smoked. 4 strips bacon, cooked and crumbled. 1/4 cup red onion, thinly sliced. 1/4 cup feta cheese, crumbled. 2 tablespoons olive oil. 2 tablespoons red wine vinegar. 1 teaspoon Dijon mustard. Salt and pepper to taste.
Instructions: First, smoke the cherry tomatoes. You can use either a smoker or a stovetop smoker to do this. For about 15 to 20 minutes, smoke the tomatoes until they taste smoky. Mix the mixed greens, smoked cherry tomatoes, bacon bits, red onion, and feta cheese in a large salad bowl. To make the vinaigrette dressing, mix the olive oil, red wine vinegar, Dijon mustard, salt, and pepper in a small bowl with a whisk. Pour the vinaigrette over the salad and toss it all together to make sure everything is covered. If you want, you can top the salad right away with extra crumbled bacon and feta cheese.
