Ingredients: 3 ripe bananas. 2 cups rolled oats. 1/2 cup peanut butter. 1/4 cup honey. 1 tsp vanilla extract. 1/2 tsp cinnamon. 1/2 cup chocolate chips.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, mash the ripe bananas until smooth. Add the rolled oats, peanut butter, honey, vanilla extract, and cinnamon to the bowl. Mix well until all ingredients are combined. Fold in the chocolate chips, ensuring even distribution throughout the cookie dough. Using a spoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them apart. Gently flatten each cookie with the back of a fork or your fingers. Bake in the preheated oven for about 12-15 minutes, or until the cookies are golden brown around the edges. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
