Mission name: Instant kara kuzhi paniyaram Ground set up: Dosa batter - 2cups Rava/semolina- 1cup Mustard seeds - 1tbsp Shallots - 8nos Green chilli - 2nos Salt - 1 tsp Baking soda - 1pinch Oil - half cup Curry leaves -2sprigs No. of disasters per fire: 4persons How to launch: 1. Mix rava + salt + baking soda to the dosa batter and set it aside. 2. Heat a tawa with oil, drop the mustard seeds to crackle, then add the finely chopped green chillies, onions and pour it into the dosa batter. Give it a good mix and allow it to rest for 15mins. 3. Heat the kuzhi paniyaram kadai with 1tbsp of oil in each holes and pour the batter in batches. 4. Let the batter cook for 2minutes in medium flame and then turn over the paniyarams with the help of a spoon or fork to cook the other side and cook for another 1minute. 5. Once both the sides turn golden brown. It's ready to serve hot. Mission launched: Delicious evening teatime snack or served as morning breakfast. Post mission expedition: 1. Schezwan chutney is a good combo for this paniyaram. 2. To prepare a quick chutney for this recipe, quickly blend together 1large onion + 1tomato + 1 dried chilli + half tbsp salt and serve. 3. Adding rava will give a good crispy texture to the paniyaram. 4. Resting the dough for a while will help in rising the paniyarams. 5.
