What I Ate Wednesday (WIAW #1)
Happy Hump Day! Yesterday I felt like it was Thursday and today I’m wondering how it’s already Wednesday. It’s been a weird week to say the least. For the past couple of days, I’ve really been trying to be mindful of the foods I’m putting into my body. I’m trying to make an effort to eat more vegetables, but I definitely think this could even use some improvement! I figured I’d start to share what a day in the life of eating looks like for me in hopes of giving you all some meal ideas, as well as to make myself more cognizant of what I’m consuming.
So, here’s the first installment of What I Ate Wednesday (aka WIAW)…but really, this is what I ate on Monday.
I started out the day with Purely Elizabeth’s Ancient Grain Oatmeal mixed with a bit of Purely Elizabeth’s Original Granola. I cooked it with almond milk and also threw in some cinnamon, sliced almonds, walnuts, and organic stevia.
Around 11 am I was craving a little something to sip on, so I made myself some Yogi Honey Lavender Stress Relief Tea. I am in love with their teas, not to mention, their cute little motivational messages that come attached.
For lunch I enjoyed a kale and quinoa bowl from b.good (their Local Apple and Bacon Bowl with Chicken, to be exact). I ate about half of it and then felt pretty full, so I decided to save the rest for later in the afternoon.
During the afternoon I was craving something sweet, so I dug into my new go-to snack—sliced apples with (a lot of) cinnamon. So yummy. Around 4pm I was still a bit hungry, so I decided to finish the kale and quinoa bowl. Nom.
At 5:30 I was in need of a little pick-me-up, so I drank a citrus Kombucha. I am SO obsessed with Kombucha and look forward to this treat everyday. I like to drink this in place of coffee (I kicked that habit to the curb a couple of months ago) and feel like it energizes me without making me shaky or giving me the negative caffeine side effects.
After CrossFit, I whipped up this delish omelet. I used 3 egg whites and 1 egg and then added tomatoes, peppers, and basil…and of course, I topped it off with some hot sauce!
After dinner I had another cup of Yogi tea, but I was still left wanting something a bit more. I decided to end the night with two tablespoons of Justin’s Maple Almond Butter…straight from the jar!
