Delicious mini cheesecakes with a tangy raspberry twist, perfect for any dessert occasion. These Cheesecake Himbeer Tartelettes are a delightful combination of creamy cheesecake filling and fresh raspberries, all nestled in a buttery biscuit crust.
Ingredients: 200g digestive biscuits. 100g butter, melted. 300g cream cheese. 100g sugar. 1 tsp vanilla extract. 2 eggs. 150g fresh raspberries. 2 tbsp raspberry jam.
Instructions: Set the oven to 180C 350F and heat it up. Melt the butter and mix it in with the digestive biscuit crumbs. Press the cookie mixture into the bottom of each tartlet pan. Mix the cream cheese, sugar, and vanilla extract in a bowl until the mixture is smooth. One egg at a time, making sure to mix well after each addition. Spread the cheesecake mix on top of the biscuit bases in the tartlet pans. Spread the fresh raspberries out evenly on top of the cheesecake mix. The cheesecake should be baked in a hot oven for 20 to 25 minutes, or until it is set. Take it out of the oven and let it cool down. Put the raspberry jam in a small saucepan and heat it until it melts. For a shiny finish, brush the melted jam over the top of the tartelettes after they have cooled. Put it in the fridge for at least an hour before you serve it.
