This juicy rack of pork was marinated in a tasty mix of Dijon mustard, soy sauce, and spices before it was grilled on the BBQ. It's great for a BBQ or a special dinner with the family.
Ingredients: 1 rack of pork about 3-4 pounds. 1/4 cup olive oil. 3 cloves garlic, minced. 2 tablespoons Dijon mustard. 2 tablespoons soy sauce. 2 tablespoons brown sugar. 1 tablespoon smoked paprika. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Preheat your BBQ grill to medium-high heat. In a small bowl, mix together olive oil, minced garlic, Dijon mustard, soy sauce, brown sugar, smoked paprika, dried thyme, salt, and pepper to create the marinade. Place the rack of pork in a large resealable plastic bag and pour the marinade over it. Seal the bag, ensuring the marinade coats the pork evenly. Marinate in the refrigerator for at least 2 hours or overnight for best results. Remove the rack of pork from the marinade and let it come to room temperature while you preheat the grill. Grill the rack of pork over medium-high heat, turning occasionally, until the internal temperature reaches 145F 63C for medium doneness. Adjust cooking time based on desired doneness. Remove the pork from the grill and let it rest for 10 minutes before slicing between the bones. Serve the BBQ roasted rack of pork slices with your favorite barbecue sauce and enjoy!
