While I was making my salad this morning for lunch I realize I had a bell pepper left that needed to be eaten.
I had a thought on the way in to work wondering if I could stuff it with the sloppy joe meat we are having tonight and save one the points for bread.
Sure enough I can!
I will only be making the one since I only have one, but I am excited to see how this will taste.

Meal Planning 101
Meal planning has started for the first time this week in our home. We needed a way to have dinner every night without stressing over what we would cook. Monday: Skillet chicken and rice with broccoli and cheddar
Tuesday: Penne alla Vodka
Wednesday: Chicken Fricassee
Thursday: Orange-flavored chicken
Friday: Battered fried fish
Fridays tend to be fish because it’s quick, and there are no leftovers. Even if there were, Husband couldn’t reheat them at work. :-D Lots of chicken this week because there was lots of chicken on sale. So the freezer is once more stocked.
