Pictured here is another type of lamb meat, with cartilage in it so you get extra calcium & crunchy texture (高鈣羊肉） You also see the coal burning in the center of the copper pot & goji berries/mushroom/scallions for broth base Last picture's sesame sauce is soooo good. There's something special about northern China's sesame paste / sesame sauces, it just tastes better! Beijing lamb hotpot! 🐑🐑🐑 Beijing hotpot is a lot like shabu shabu where you don't drink the soup. Boiling hot copper pot with very simple broth, scallions and what not. The point is to eat super fresh non-frozen lamb meat (or so I was told) and to taste the ingredient in its most basic / pure form. Similar to beef, lamb shouldn't be fully cooked when it is fresh and clean (and safe!) but my Beijing friends will only let me eat fully cooked meat because of food safety. Such a weird dynamic to get used to!
