Dora's Dish presents a delightful twist on traditional lasagna with this Pesto Lasagna recipe. Layers of lasagna noodles, creamy ricotta cheese, tangy pesto sauce, and fresh tomatoes create a burst of flavors in every bite. It's a perfect dish for gatherings or cozy family dinners.
Ingredients: 9 lasagna noodles. 2 cups pesto sauce. 2 cups ricotta cheese. 1 cup grated Parmesan cheese. 3 cups shredded mozzarella cheese. 1 cup cherry tomatoes, halved. 1/2 cup chopped fresh basil leaves.
Instructions: Warm the oven up to 190C 375F. Follow the directions on the package to cook the lasagna noodles until they are al dente. Remove the water and set it aside. Put ricotta cheese, Parmesan cheese, and half of the mozzarella cheese in a bowl and mix them together. Put a little bit of pesto sauce in a baking dish. On top of the pesto sauce, put three lasagna noodles. Cover the noodles with half of the ricotta cheese mixture. On top, put half of the cherry tomatoes and basil leaves. Add more noodles, ricotta mixture, cherry tomatoes, and basil leaves to make more layers. Add the rest of the mozzarella cheese on top. Put foil over the baking dish and bake for 25 minutes. Take the foil off and bake for another 10 minutes, or until the cheese is bubbly and golden brown. Before you serve it, let it cool down for a while. If you want, add more basil leaves as a garnish.
