Soft Sponge Aval Dosa is a South Indian crepe made with rice flakes and rice flour. It's a delicious and fluffy dosa that can be enjoyed with various accompaniments.
Ingredients: 1 cup rice flakes aval or poha. 1/2 cup rice flour. 2 tablespoons grated coconut. 1/2 teaspoon cumin seeds. 1/4 teaspoon salt. 1/4 teaspoon baking soda. 1 cup buttermilk. Oil for cooking.
Instructions: For 10 minutes, wash the rice flakes and put them in buttermilk. Soak the rice flakes and then blend them with rice flour, grated coconut, cumin seeds, salt, and baking soda. Mix the ingredients together until the batter is smooth. This will help the batter rise. Give it about 30 minutes to rest. Put a nonstick pan or griddle over medium-low heat and lightly oil it. Put a small amount of the batter on the pan and spread it out into a thin circle. First cook the dosa until the bottom is golden brown. Then turn it over and cook the other side until it's also golden brown. Do it again with the rest of the batter, adding more oil if needed. Put it on the table hot with sambar or chutney of your choice.
