Today’s lunch:
Korean meatball patties made with beef, tofu, onion and carrot [recipe]
Okra “pancake” (made with the leftover flour and egg from the patties)
Multigrain rice, kimchi
The meatballs are surprisingly light because of all the tofu in them (half the weight of the meat). Tip: The flat of your knife makes a great tofu smashing tool.
