Hrm, a single stock plus rice (very high glycemic index).
Gives me the idea to create a quick double stock instead using boxed low-sodium chicken stock for the liquid, and substituting steel-cut oats (or lower the glycemic index even more with oat bran) for the rice, and cooking in the pressure cooker until creamy, and garnishing as directed.
