I think I've found my new favorite cookies. I made brown butter chocolate chip cookies using @chuaochocolatier s'mores dark chocolate bar. The chocolate bar provides enough saltiness through the graham crackers. Made mochi cupcakes a la @alanakysar's Aloha Kitchen book. Replaced the skim milk with oat milk and still turned out great. These ones I baked for half an hour but I think 40 minutes will actually be good for.these cupcake size. Mini cheesecake bites today. Cookie butter cheesecake (although I probably could have put more into the batter) and experimented with a salted egg cracker crust. These didn't cave in as much as the pumpkin cheesecakes, so the water bath probably helped.
