It is like fourth time I make a post about this topic help me it is like 3 AM and what do I do? Right, think about small appearance elements in an old videogame
Ornstein vs Iron Dragonslayer. There is no person inside of Dragonslayer Armor, so the red plume is 1000% just a decoration on the helmet!
Ciaran and Artorias have their own long hair cut and attached to their helmets; Artorias' tail is placed by Ciaran on his grave, and her own hair that isn't braid is starting to turn white!
Abyss Watchers' hair turn white, so it is probably the reason of this "ritual"; true hair color serves as a way to be remembered as your real self! What if Ornstein and Dragonslayer did the same thing?
Old Dragonslayer, some sort of chip-away of Ornstein that encountered the Dark, had his gold change, but the red tail remained! Ciaran's braid and Artorias' hair prove that it is a working scheme and the change won't affect the detached hair, so Ornstein's long tail is ALSO a decoration on the helmet!
The question is: is it own hair of Ornstein and Dragonslayer? Would not that be very convenient that both closest people to NK are redheads? But also there are reasons it could work, like some sort of red-haired clan of Gods from which some followed NK. The tail of Old Dragonslayer IS a bit darker than the tail on actual Ornstein's armor though, and if the hair is not supposed to change, maybe this "hair" is not really hair?
At the same time, Dark Souls 3 foreshadowed development of Elden Ring so much it made them look stupid, and you know what else was in Elden Ring? Right, the aesthetic of 'red lion's mane'!
Chat what's going on with their helmets?
It IS their own hair (Siblings? Red-haired Gods clan?)
It is just a decorative plume, symbolic of lion's red mane stereotype

Dragonslayer imitates Ornstein's hair
+ In case if inequality of Dragonslayer's status will come up, I need to clarify that it was kinda just invented in English localisation:
However, Ornstein was still the chief Knight, so it is still possible that there were many that followed HIM and copied HIS style, and just this particular Dragonslayer stood out!
UPDATE: I forgot to address something...
In Dark Souls 1 version, when we wear Ornstein's armor, it doesn't have the red tail! This must mean that it had to be Ornstein's hair!
The thing is? Dark Souls 3 and Elden Ring started to use different approach to allowing the player wear bosses' armors, where we consistently "scalp" the characters you know fhshdf Dark Souls 1, however, was not using it! We still have hair of Ciaran and Artorias because they did attach theirs, but seems like it wasn't true for Ornstein. So maybe, really, they wanted to convey that the long red tail IS just his hair. Like maybe Iron Dragonslayer imitated red lion's mane, but it is Ornstein's red mane! NK's lion mane is golden/silver!
Berserk-inspired Designs in Dark Souls
Part 2 of Soulsborne designs that are potentially inspired by Berserk. This time with Dark Souls 3. (Part 1: DS1, Part 3: Bloodborne)
Sulyvahn’s Beast and Beast of Darkness
One of the most Berserk-inspired designs is Sulyvahn‘s Beast, which looks quite obviously like the Beast of Darkness.
Dragonslayer Armour and Locus (released)
The Dragonslayer Armour could be loosely inspired by Locus’ released form. The helmet is similarly shaped to Locus’ head, and the chest piece is also slightly pointy, like Locus’ chest.
Ravenous Crystal Lizard and Grunbeld (released)
Grunbeld’s released form probably served an inspiration for the Ravenous Crystal Lizard since both are dragon-like creatures covered in crystals.
Evangelist and Mozgus
The Evangelist and Mozgus have the same hat. Also, the Evangelist wears a mask while Mozgus at least has a weird mask-like face.
Gertrude’s Knight and Mozgus’ Disciples
Gertrude’s Knight could be inspired by Mozgus’ Disciples. It has angel wings. However, the rest of its body isn’t what you expect of an angel. It is voluminous and has a helmet with a somewhat deformed face as decoration. Mozgus’ Disciples also do not look like angels except for the wings.
Crystal Sage and Shierke
Both characters wear stereotypical witch clothing. So, the Crystal Sage’s design is not necessarily inspired directly by Shierke, but I still wanted to include him here.
Pus of Man and Dead Spirits
Flesh of Aldrich and Dead Spirits
Both the Pus of Man and Flesh of Aldrich are black amorphous creatures. The Dead Spirits could have served as a model for these designs since they are similar amorphous masses.
Ringed Knight and Eclipse
The Ringed Knights have a hole in their chest that looks very much like the eclipse in Berserk. And, of course, there is a real eclipse visible in Lothric Castle.
A Nithe by any other name is still a knife.
