Oyster mushroom broth (vegan & vegatarian)

Earthy, smoky oyster mushrooms are a great strore cupboard ingredient. They can be rehydrated in minutes for stir frys, star dishes, or like this in a quick soup…..

Place water in a saucepan to boil, add enough dried oyster mushrooms to allow 2-3 mushrooms per person. Add salt & pepper to taste. Allow the mushrooms to rehydrate & plump up (about 20-30 min) Add chopped spring onion.
