I made paneer in my instant pot today and IT...
What is paneer? It looks yummy and could probably easily be made vegan!
Paneer is a simple kind of soft fresh cheese made in India. It’s vegetarian because it doesn’t use rennet, but I don’t know if it’d be possible to make vegan paneer -- to make paneer, you basically just heat up milk, add vinegar or lemon juice to curdle it, and then drain the whey. I don’t know if any of the common milk substitutes would react properly, but paneer doesn’t taste all that dissimilar to tofu, so you could just use tofu instead.
The sauce, on the other hand, can easily be made vegan -- the cookbook I got it from suggests substituting coconut oil for the butter and full-fat coconut milk for the cream (the only other ingredients are tomatoes and spices). The recipe is also available here. If you’re making the sauce for paneer or tofu you’re supposed to add an extra 1/4 cup of water before you cook the tomatoes and spices.
