Dry Age Beef Roast (NSFVegan)
I wasn't sure at first if dry aging this beef was going to make much of a difference, but the meat was extra tasty!
Ingredients
Favorite Roast Cut
2 Red Onions
2 White onions
1 bulb garlic
Seasoning
olive Oil
1. Rince, dry, and wrap the Roast in cheese cloth for 3-5 days.
2. Trim the dry pieces and discard. Rub the beef with olive oil and season. I clipped the strings accidently as I was trimming off the dry parts, try to leave a bit of the fat.
3. Peel the onion and chop into quarters. I used sweet white and red onions that will only get sweeter as the sugars caramelize.
4. Peel the garlic and insert a few cloves into the meat as well as around the onions. Inserting the cloves really allows the flavors to penetrate.
5. Lay the beef ontop of the onion quarters, fat side up, and drizzle a bit of olive oil on the onions and garlic.
5. Put the beef into a pre heated 450 degree oven and then reduce to 375 and cook for 1 hour for medium rare. Let the beef stand covered for 10 minutes to allow the juices to cool before slicing.
